CHEDDAR & APPLE PUPCAKES
Ingredients:
1 1/2 cups flour
1/4 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup applesauce
1/2 cup water
1/4 cup vegetable oil
2 tablespoons honey
2 eggs
1 apple, peeled, cored and minced
1 cup grated cheddar cheese
Directions:
Preheat oven to 400 degrees.
1. In a large bowl whisk together the flour, oats, baking powder and baking soda.
2. In a medium bowl, whisk together the applesauce, water, oil, honey and eggs, then stir in the apple and cheese. Add the wet ingredients to the flour mixture and stir until just barely blended.
3. Line muffin tins with paper liners. Spoon the batter into the muffin tins, filling almost full.
Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the tins for a few minutes and then remove to a cooling rack to cool completely.
