GINGERBREAD COOKIES
GINGERBREAD COOKIES
Ingredients:
1 1/2 cups oat flour
1 1/2 cups brown rice flour
1 tsp. baking powder
1 tsp. ground ginger
1 tsp. cinnamon
1/2 tsp. baking soda
1 egg
1/4 cup safflower oil
1/2 cup molasses (blackstrap or regular)
1/4 cup peanut butter
1 TB. apple cider vinegar
Directions:
Preheat oven to 350 degrees.
1. Combine all ingredients together and mix thoroughly until a dough forms.
2. Roll the dough out on a lightly floured surface to 1/4" thickness.
3. Use a cookie cutter and cut out the treats.
4. Place on an ungreased cookie sheet (they can be rather close together as they don't spread while cooking).
5. Bake 18-22 minutes or until edges are golden brown.
Let cool completely on wire rack and store at room temperature in a loosely covered container.
