EASY PEASY CHEESY VEGGIE PATTIES
Ingredients:
1 cup cooked leftover vegetables, chopped into little pieces, grated or mashed
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes
1 tablespoon brewers yeast or nutritional yeast
1 cup cooked rice or bulgur
1 cup grated cheese
1 tablespoon turmeric powder
2 eggs, beaten
Directions:
Preheat oven to 350 degrees
1. Mix all the ingredients well.
2. Drop by teaspoonfuls onto a greased cookie sheet.
3. Bake at 350 degrees until they are lightly browned
4. Cool and store in an airtight container in the refrigerator.
NOTE: These patties are bite-sized when they are done and should be eaten within a few days to assure their freshness.
This recipe is great for using up your leftover vegetables. Try experimenting with mashed potatoes, carrots, sweet potatoes, peas, green beans, or any other vegetables you have on hand.
