HOUND DOG HASH
Ingredients:
4 cups long-grain rice
1 pound ground chicken or turkey
2 carrots, diced
1/2 cup chopped broccoli or green beans
1 teaspoon chopped fresh parsley
Directions:
Pour 6 cups water into a large pot and add the rice. Crumble in the ground chicken and mix well. Stir in the vegetables.
Cook over medium heat until the mixture comes to a boil. Turn the heat to low, cover, and simmer for 15 minutes. Turn off the heat and let the mixture rest for 15 minutes. (The meat and vegetables will continue to cook with the rice.)
Sprinkle parsley on top. Fluff the rice with a fork to mix the contents thoroughly.
Cool to room temperature before serving.
Store covered in the refrigerator for up to 3 days. Makes approximately 3 days of food for your recovering, medium size dog.
