PEANUT BUTTER AND CINNAMON COOKIES
Ingredients:
1/2 cup unsalted peanut butter
3/4 cup beef, chicken or fish stock
2 cups whole wheat flour, plus more for rolling out
1 teaspoon baking powder
1 teaspoon ground cinnamon
Directions:
Preheat oven to 300 degrees. Lightly dust a baking sheet with flour.
1. In a medium bowl, melt the peanut butter and stock for 40 seconds on high power in the microwave. Stir until the peanut butter is melted evenly into the stock.
2. Add the flour, baking powder, and cinnamon to the peanut butter mixture and stir with a spatula until the dough begins to gather together. Form into a ball and knead briefly until smooth.
3. Transfer directly to the baking sheet. Flatten the ball and shape into a square.
4. Dust the top of the dough with additional flour and roll into a 10" square. Then cut with a pizza cutter into 1" squares.
5. Bake for 20 minutes for a soft cookie, or up to 35 minutes for a crisper cookie.
Remove from oven and cool on the baking sheet before breaking them apart on the cut lines.
Yield: 100 cookies
