NO BAKE PEANUT BUTTER & PUMPKIN BALLS
Ingredients:
1/2 cup peanut butter
1 cup pumpkin, (not pie filling)
1 tsp. cinnamon
3 tbsp. honey
2 1/2 cups oats
Instructions:
1. Line a baking sheet with wax paper and set aside.
2. Mix together the peanut butter, pumpkin, cinnamon and honey. Add the oats and mix well. If the consistency seems too wet, add a little more oats.
3. Roll the batter into balls and place on prepared baking sheet.
4. Place the baking sheet in the refrigerator to let the balls harden a bit. They can be stored in the refrigerator in an airtight container for up to 3 weeks or in the freezer for up to 3 months.
