SALMON BLONDIES
SALMON BLONDIES
Ingredients:
1 (14.5 ounce) can of salmon, or 2 (7 ounce) cans
1/2 cup cottage cheese
1 1/2 cups garbanzo bean flour
1/2 cup shredded cheddar cheese
Grated Parmesan cheese for topping
Directions:
Preheat oven to 350 degrees.
1. Empty can(s) of salmon (liquid, bones, and all) into a food processor.
2. Add cottage cheese and process well, until mixture is a mousse-like consistency.
3. Add flour and cheddar and mix into a sticky, loose dough.
4. Grease the bottom and sides of an 8x8 or 9x12 inch baking pan. (You'll get thicker blondies with the smaller pan.)
5. Turn dough out into the greased pan and push to the edges of the pan with wet hands or a spatula.
6. Sprinkle with Parmesan cheese and bake for 35-40 minutes, or until golden brown.
7. Cool in the pan and then cut into the desired size. Store in the refrigerator in an airtight container.
