SOLIDARITY MUFFINS
Ingredients:
1 1/2 cups oat flour
1 1/2 cups brown rice flour
1 Tb. baking powder
1 tsp. cinnamon
2 eggs
3/4 cup honey
1 cup unsweetened applesauce
1/4 cup safflower oil
Preheat oven to 350 degrees.
1. Combine all ingredients together and mix thoroughly.
2. Place cupcake papers into a muffin pan. Spoon mixture evenly into the papers close to the top.
3. Bake 18-22 minutes or until a toothpick inserted into the center comes out clean.
4. Remove from the oven and let cool completely on a wire rack. Store in an airtight container in the refrigerator.
